Mama Mitchell's Ultimate Easter Trifle

Wow your family, friends and guests with this easy to assemble show-stopper. Whether you choose our classic, treasured Original Mama Mitchell’s Pound Cake or our brand-new Mama Mitchell’s Lemon Pound Cake, it will be the most eggcellent addition for Easter breakfast, brunch, lunch or dinner! So, come along and join us in the kitchen and let's make memories with those you love most!
What you’ll need: Trifle bowl or individual glass jars
1. Mama Mitchell’s Pound Cake (Vanilla or Lemon) sliced into bite-size pieces
2. 6 cups fresh berries (we love strawberries, blueberries and blackberries)
*fresh berry compote: Add berries, 2 tbsp of sugar and 1 tbsp lemon juice to a medium sized sauce pot. Simmer on stove for 3-4 minutes until juices have combined. Remove from heat and let cool.
3. Homemade Whipped Topping
*Add 1 cup cold heavy whipping cream to a large mixing bowl, 2 tbsp of confectioner’s sugar OR granulated sugar (not both!) and ½ tsp pure vanilla extract. Using a hand mixer or stand mixer, whip heavy cream, sugar and vanilla on medium-high speed (3-4minutes) until medium/stiff peaks have formed. Use immediately or chill overnight in refrigerator for 24hrs.
4. Start layering!
*Add your bite-size pieces of Mama Mitchell’s Pound cake to the bottom of your trifle bowl or glass jar. Next, layer your whipped topping. Lastly, add your berry compote and repeat this process until desired layers have been achieved. Garnish with mint leaves (optional) and ENJOY!
